- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

- In another bowl, whisk melted coconut oil, honey, egg, and vanilla extract until smooth.
- Mix dry ingredients into wet until dough forms. Fold in raisins or chocolate chips if using.
- Scoop dough into portions and place on baking sheet.
- Bake for 10–12 minutes until lightly golden at edges.
- Cool on baking sheet 5 minutes, then transfer to cooling rack.
