Ingredients
  

  • 1 1/2 cups rolled oats
  • 3/4 cup whole wheat flour or oat flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon
  • 1 pinch salt
  • 1/3 cup coconut oil melted
  • 1/3 cup honey or maple syrup
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/3 cup raisins or dark chocolate chips optional
  • 2 tbsp chopped nuts optional

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together oats, flour, baking soda, cinnamon, and salt.
  3. In another bowl, whisk melted coconut oil, honey, egg, and vanilla extract until smooth.
  4. Mix dry ingredients into wet until dough forms. Fold in raisins or chocolate chips if using.
  5. Scoop dough into portions and place on baking sheet.
  6. Bake for 10–12 minutes until lightly golden at edges.
  7. Cool on baking sheet 5 minutes, then transfer to cooling rack.

Notes
