Ingredients
  

  • 1 cup pumpkin puree unsweetened
  • 1 cup rolled oats
  • 1/2 cup almond flour
  • 1/4 cup maple syrup
  • 2 tsp pumpkin pie spice
  • 1/4 cup mini dark chocolate chips optional
  • 1/4 cup chopped pecans or walnuts for coating
  • 2 tbsp cocoa powder or shredded coconut optional, for rolling
  • pinch salt

Method
 

  1. Combine pumpkin puree, maple syrup, and pumpkin pie spice in a large mixing bowl until smooth.
  2. Stir in oats, almond flour, chocolate chips, and a pinch of salt until mixture forms sticky dough.
  3. Chill the dough for 30–45 minutes to firm up.
  4. Roll small portions into balls (1–2 tbsp each).
  5. Roll truffles in cocoa powder, shredded coconut, or chopped nuts.
  6. Place truffles on a parchment-lined tray and refrigerate for 1 hour to set.
  7. Serve chilled or store in an airtight container in the fridge for up to 1 week.

Notes

Optional: dip in melted dark chocolate for extra indulgence. Perfect for gifting or fall dessert tables.
