- Combine pumpkin puree, maple syrup, and pumpkin pie spice in a large mixing bowl until smooth.
- Stir in oats, almond flour, chocolate chips, and a pinch of salt until mixture forms sticky dough.
- Chill the dough for 30–45 minutes to firm up.
- Roll small portions into balls (1–2 tbsp each).
- Roll truffles in cocoa powder, shredded coconut, or chopped nuts.
- Place truffles on a parchment-lined tray and refrigerate for 1 hour to set.
- Serve chilled or store in an airtight container in the fridge for up to 1 week.
