  • 1 cup lentils cooked
  • 2 cups spinach chopped
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 cup tomatoes diced
  • 0.5 cup vegetable broth
  • 0.5 cup cheese optional

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Cook quinoa and set aside.
  3. Sauté onion and garlic in olive oil.
  4. Add spinach and cook until wilted.
  5. Mix in lentils, tomatoes, broth, and spices.
  6. Combine with quinoa and transfer to baking dish.
  7. Top with cheese and bake for 25–30 minutes.
