Method
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- In a bowl, whisk together oats, whole wheat flour, baking powder, baking soda, salt, and cinnamon.
- In another bowl mix honey, melted coconut oil, egg, Greek yogurt, vanilla, and milk until smooth.
- Combine wet and dry ingredients, stirring gently until a soft dough forms.
- Toss diced strawberries with flour and fold them into the dough.
- Shape dough into a round disc about 1 inch thick on the prepared baking sheet.
- Cut into 8 wedges and slightly separate them.
- Bake for 18–22 minutes until golden. Cool on a wire rack before serving.
Notes
For extra flavor, add lemon zest or sliced almonds. Store leftovers in an airtight container.
