Ingredients
  

Scone Dough
  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 tsp cinnamon optional
  • 0.25 cup honey or maple syrup
  • 0.25 cup coconut oil or butter melted
  • 1 egg large
  • 0.5 cup Greek yogurt
  • 1 tsp vanilla extract
  • 0.5 cup milk
  • 1 cup fresh strawberries diced
  • 1 tbsp flour for coating strawberries

Method
 

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together oats, whole wheat flour, baking powder, baking soda, salt, and cinnamon.
  3. In another bowl mix honey, melted coconut oil, egg, Greek yogurt, vanilla, and milk until smooth.
  4. Combine wet and dry ingredients, stirring gently until a soft dough forms.
  5. Toss diced strawberries with flour and fold them into the dough.
  6. Shape dough into a round disc about 1 inch thick on the prepared baking sheet.
  7. Cut into 8 wedges and slightly separate them.
  8. Bake for 18–22 minutes until golden. Cool on a wire rack before serving.

Notes

For extra flavor, add lemon zest or sliced almonds. Store leftovers in an airtight container.
