  • 1 lb smoked sausage sliced into coins
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 4 potatoes peeled and diced
  • 1 can white beans drained and rinsed
  • 1 can diced tomatoes
  • 6 cups chicken broth
  • 3 cups kale chopped, stems removed
  • 1 tsp dried thyme
  • 1 tsp smoked paprika
  • 0.5 tsp crushed red pepper flakes optional
  • salt and black pepper to taste
Garnish
  • fresh parsley for garnish

Method
 

  1. Heat olive oil in a large pot over medium heat. Brown sliced sausage until golden, about 5 minutes. Remove and set aside.
  2. Add onion to the pot and cook until softened, about 3 minutes. Stir in garlic and cook 1 minute more.
  3. Add potatoes, beans, tomatoes, and chicken broth. Stir in thyme, smoked paprika, and red pepper flakes. Season with salt and pepper.
  4. Bring to a boil, then reduce to a simmer. Cook for 20–25 minutes until potatoes are tender.
  5. Stir in kale and return sausage to the pot. Simmer for another 5 minutes.
  6. Taste and adjust seasoning. Garnish with parsley and serve hot.

Notes

This soup tastes even better the next day as the flavors meld.
