Method
- Heat olive oil in a large pot over medium heat. Brown sliced sausage until golden, about 5 minutes. Remove and set aside.
- Add onion to the pot and cook until softened, about 3 minutes. Stir in garlic and cook 1 minute more.
- Add potatoes, beans, tomatoes, and chicken broth. Stir in thyme, smoked paprika, and red pepper flakes. Season with salt and pepper.
- Bring to a boil, then reduce to a simmer. Cook for 20–25 minutes until potatoes are tender.
- Stir in kale and return sausage to the pot. Simmer for another 5 minutes.
- Taste and adjust seasoning. Garnish with parsley and serve hot.
Notes
This soup tastes even better the next day as the flavors meld.
