Ingredients
  

Egg Mixture
  • 2 cups egg whites
  • 0.5 cup low-fat shredded cheese
  • 0.5 cup spinach chopped
  • 0.33 cup bell peppers diced
  • 0.25 cup onion chopped
  • 0.25 cup mushrooms chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp oregano

Method
 

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. Whisk egg whites with seasoning until frothy.
  3. Distribute chopped vegetables into muffin cups.
  4. Add cheese evenly to each cup.
  5. Pour egg mixture over fillings.
  6. Bake for 18–22 minutes until set.
  7. Cool slightly and remove from pan.
