Ingredients
  

Ice Cream Base
  • 2 cups full-fat cottage cheese
  • 1 cup plain Greek yogurt
  • 1 scoop vanilla protein powder
  • 0.33 cup salted caramel sauce
  • 2 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • 0.25 tsp flaky sea salt
  • 2 tbsp cream cheese softened
  • 2 tbsp roasted pecans optional, crushed

Method
 

  1. Add cottage cheese, Greek yogurt, cream cheese, protein powder, maple syrup, vanilla extract, and caramel sauce to a blender.
  2. Blend until completely smooth and creamy, scraping down the sides as needed.
  3. Taste and adjust sweetness if desired.
  4. Fold in crushed pecans if using.
  5. Transfer mixture into a freezer-safe container.
  6. Drizzle extra caramel sauce on top and swirl lightly.
  7. Sprinkle with flaky sea salt.
  8. Freeze for 3–4 hours until scoopable.
  9. Let sit for 5–10 minutes before scooping and serving.

Notes

For the creamiest texture, use full-fat cottage cheese and avoid overfreezing. Add extra caramel drizzle before serving.
