Ingredients
  

Shrimp Filling
  • 1 lb raw shrimp, peeled and deveined
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp garlic powder
  • 0.5 tsp cumin
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 cup shredded reduced-fat cheese
  • 4 whole wheat tortillas
Avocado Salsa
  • 1 avocado, diced
  • 1 cup diced tomatoes
  • 0.25 cup red onion, chopped
  • 2 tbsp cilantro, chopped
  • 1 tbsp lime juice

Equipment

Method
 

  1. Season shrimp with olive oil and spices.
  2. Cook shrimp in a skillet over medium-high heat for 2–3 minutes per side until pink.
  3. Prepare avocado salsa by mixing all salsa ingredients.
  4. Assemble tortillas with shrimp and cheese, then fold.
  5. Cook quesadillas in skillet until golden and cheese melts.
  6. Slice and serve with fresh salsa on top.

Notes

Do not overcook shrimp to keep them tender. Serve immediately for best texture.
