  • 3/4 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 1/2 tsp ground cinnamon
  • 1/4 cup unsalted butter cold, cubed

Method
 

  1. Preheat the oven to 350°F (180°C) and grease a 9-inch baking dish.
  2. Slice the nectarines and place in a mixing bowl. Add lemon juice, sugar, cinnamon, vanilla extract, and cornstarch. Toss to coat evenly.
  3. Spread the nectarine mixture evenly in the prepared baking dish.
  4. In a separate bowl, combine oats, brown sugar, flour, and cinnamon. Add cold butter and mix with fingers or a pastry cutter until crumbly.
  5. Sprinkle the oat topping evenly over the nectarines.
  6. Bake for 35–40 minutes or until topping is golden and nectarines are bubbling.
