- Cream butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla and mix well.
- Whisk flour, baking soda, baking powder, and salt in a separate bowl.
- Add dry mixture to wet mixture and combine to form dough.
- Shape dough into small ovals, flatten, and create crisscross texture using a fork.
- Bake at 350°F (175°C) for 8–10 minutes until lightly golden.
- Cool completely on a wire rack.
- Mix peanut butter, butter, powdered sugar, and milk to create the filling.
- Spread or pipe filling onto one cookie and sandwich with another.
Notes
For a more authentic look, pinch the middle of each cookie slightly to mimic the peanut shape.
