Ingredients
  

Cookie Dough
  • 0.5 cup unsalted butter softened
  • 1 cup creamy peanut butter
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
  • 1.5 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.5 tsp baking powder
  • 0.25 tsp salt
Filling
  • 0.5 cup creamy peanut butter
  • 2 tbsp unsalted butter softened
  • 1 cup powdered sugar
  • 1-2 tbsp milk or cream

Method
 

  1. Cream butter, peanut butter, granulated sugar, and brown sugar until light and fluffy.
  2. Add egg and vanilla and mix well.
  3. Whisk flour, baking soda, baking powder, and salt in a separate bowl.
  4. Add dry mixture to wet mixture and combine to form dough.
  5. Shape dough into small ovals, flatten, and create crisscross texture using a fork.
  6. Bake at 350°F (175°C) for 8–10 minutes until lightly golden.
  7. Cool completely on a wire rack.
  8. Mix peanut butter, butter, powdered sugar, and milk to create the filling.
  9. Spread or pipe filling onto one cookie and sandwich with another.

Notes

For a more authentic look, pinch the middle of each cookie slightly to mimic the peanut shape.
