Ingredients
  

Cranberry Base
  • 12 oz fresh cranberries
  • 1 cup water
  • 1 cup granulated sugar
  • 3 tbsp unflavored gelatin powder
  • 2 tbsp lemon juice
  • 1 tsp orange zest optional

Equipment

  • Saucepan
  • Blender or immersion blender
  • Fine-mesh sieve
  • Square baking dish

Method
 

  1. Simmer cranberries with water until they burst and soften.
  2. Blend the mixture until smooth and strain if desired.
  3. Return purée to saucepan and stir in sugar, lemon juice, and zest.
  4. Sprinkle gelatin over warm mixture and let bloom.
  5. Heat gently until gelatin dissolves completely.
  6. Pour into lined dish and refrigerate until set.
  7. Cut into pieces and coat with sugar if desired.

Notes

Avoid boiling after adding gelatin to ensure proper setting.
