Ingredients
  

Pretzel Dough
  • 4 cups all-purpose flour
  • 2.25 tsp active dry yeast
  • 1 tbsp granulated sugar
  • 1.5 tsp salt
  • 1.25 cups warm water
  • 2 tbsp olive oil
Filling
  • 1.5 cups feta cheese crumbled
  • 2 tbsp cream cheese softened
  • 2 tbsp parsley chopped
  • 1 tbsp dill chopped
  • 1 garlic clove minced
Baking Soda Bath
  • 8 cups water
  • 0.5 cup baking soda

Method
 

  1. Activate yeast in warm water and sugar until foamy.
  2. Mix in flour, salt, and olive oil; knead until smooth.
  3. Let dough rise for 60 minutes until doubled.
  4. Mix feta, cream cheese, herbs, and garlic.
  5. Divide dough, fill, seal, and shape into pretzels.
  6. Dip in baking soda bath for 20–30 seconds.
  7. Brush with egg wash and bake at 425°F for 15–18 minutes.

Notes

Seal edges well to prevent filling from leaking. Best served warm.
