Ingredients

Filling
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning or homemade
  • 1 cup cooked rice
  • 0.5 cup nacho cheese sauce
  • 0.25 cup sour cream
  • 0.25 cup diced onions optional
Assembly
  • 4 flour tortillas large burrito-size
  • 2 cups shredded cheese blend cheddar or Mexican blend
  • 2 tbsp butter

Equipment

  • Skillet
  • Mixing bowl
  • Spatula

Method

  1. Cook ground beef in a skillet until browned. Drain fat, add taco seasoning, and simmer with 1/4 cup water.
  2. Combine beef, rice, nacho cheese, sour cream, and onions in a bowl.
  3. Place filling in center of tortilla, sprinkle extra cheese, and roll into burrito shape.
  4. Heat skillet, sprinkle cheese onto pan, and place burrito seam-side down. Cook until cheese melts and crusts.
  5. Flip and toast the other side until golden. Serve warm with salsa or sour cream.

Notes

Customize with your favorite fillings — black beans, grilled chicken, or jalapeños all work beautifully.
