Authentic homemade gyros made with seasoned lamb and beef, crisped to perfection and served with pita, vegetables, and fresh tzatziki.

Ingredients
  

Gyro Meat
  • 1 lb ground lamb
  • 1 lb ground beef
  • 1 small onion grated
  • 4 cloves garlic minced
  • 1 tbsp dried oregano
  • 1 tsp dried rosemary
  • 1 tsp dried marjoram
  • 1 tsp salt
  • 0.5 tsp black pepper
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 0.5 cucumber grated and drained
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp fresh dill chopped
  • 0.25 tsp salt
For Serving
  • 6 pita breads warmed
  • 2 tomatoes sliced
  • 1 red onion thinly sliced

Method
 

  1. Grate onion and squeeze out excess moisture.
  2. Mix lamb, beef, onion, garlic, and seasonings in a bowl.
  3. Pulse mixture in a food processor until smooth and sticky.
  4. Press mixture into a loaf pan and bake at 350°F (175°C) for 45–55 minutes.
  5. Let loaf rest for 10 minutes, then slice thinly.
  6. Pan-sear slices to crisp edges.
  7. Combine yogurt, cucumber, garlic, olive oil, lemon, dill, and salt to make tzatziki.
  8. Assemble gyros with pita, meat, veggies, and tzatziki.

Notes

For the most authentic texture, compress the meat tightly and blend briefly in a food processor.
