Ingredients
  

Scone Dough
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 tsp pumpkin pie spice
  • 1/2 cup butter cold, cubed
  • 1/2 cup pumpkin puree
  • 1 egg large
  • 1 tsp vanilla extract
  • 1-2 tbsp milk or heavy cream for brushing
Glaze
  • 1/2 cup powdered sugar
  • 1-2 tbsp milk
  • 1/2 tsp vanilla extract

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together flour, sugar, baking powder, salt, and pumpkin pie spice.
  3. Cut cold butter into the dry mixture until it resembles coarse crumbs.
  4. Mix pumpkin puree, egg, and vanilla, then combine with dry ingredients to form dough.
  5. Shape dough into 1-inch thick circle, cut into 8 wedges, and place on baking sheet. Brush with milk or cream.
  6. Bake 18-22 minutes until golden brown. Cool slightly.
  7. Whisk powdered sugar, milk, and vanilla for glaze. Drizzle over scones and serve.

Notes

Store in an airtight container for 2-3 days. Reheat slightly before serving.
