Ingredients
  

Tart Crust
  • 1.5 cups all-purpose flour
  • 0.25 cup granulated sugar
  • 0.5 tsp salt
  • 0.5 cup unsalted butter cold, cubed
  • 1 egg yolk
  • 2-3 tbsp ice water
Filling
  • 2 cups fresh apricots sliced
  • 0.33 cup honey
  • 1 tsp lemon zest
  • 1 tbsp lemon juice
  • 1 tsp culinary lavender crushed
  • 2 tbsp unsalted butter
  • 1 tbsp cornstarch

Method
 

  1. Prepare tart dough and chill before baking.
  2. Blind bake tart shells until lightly golden.
  3. Simmer apricots, honey, lemon, lavender, and butter until soft.
  4. Thicken filling with cornstarch slurry.
  5. Fill tart shells and bake until bubbling.
  6. Cool completely before serving.

Notes

Use culinary lavender sparingly to avoid bitterness.
