Honey BBQ Chicken Rice

Ingredients
  

  • 1 tbsp olive oil
  • 1 lb boneless skinless chicken thighs cut into bite-sized pieces
  • salt and pepper to taste
  • 1 small onion chopped
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 1 1/2 cups long-grain rice
  • 2 1/2 cups chicken broth
  • 1/2 cup BBQ sauce smoky style
  • 2 tbsp honey
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • fresh green onions sliced, for garnish
  • sesame seeds optional garnish

Equipment

  • Large skillet or pot with lid
  • Wooden spoon

Method
 

  1. Heat olive oil in a pot and sear seasoned chicken until golden. Remove and set aside.
  2. Sauté onion, garlic, and bell peppers until softened.
  3. Stir in rice, smoked paprika, and chili powder. Toast for 1–2 minutes.
  4. Add chicken broth, BBQ sauce, and honey. Stir well and return chicken to the pot.
  5. Cover and simmer 20–22 minutes until rice is cooked.
  6. Let rest 5 minutes, then fluff with a fork.
  7. Garnish with green onions and sesame seeds before serving.

Notes

For a spicier version, add a splash of hot sauce or cayenne pepper. Store leftovers in the fridge for up to 4 days.
