Method
- Heat olive oil in a pot and sear seasoned chicken until golden. Remove and set aside.
- Sauté onion, garlic, and bell peppers until softened.
- Stir in rice, smoked paprika, and chili powder. Toast for 1–2 minutes.
- Add chicken broth, BBQ sauce, and honey. Stir well and return chicken to the pot.
- Cover and simmer 20–22 minutes until rice is cooked.
- Let rest 5 minutes, then fluff with a fork.
- Garnish with green onions and sesame seeds before serving.
Notes
For a spicier version, add a splash of hot sauce or cayenne pepper. Store leftovers in the fridge for up to 4 days.
