Ingredients
  

Cornbread Batter
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup milk
  • 1/4 cup unsalted butter melted
  • 2 large eggs
  • 1/4 cup honey
  • 2 tbsp butter melted, for honey butter drizzle
  • chopped parsley or chives optional garnish

Method
 

  1. Preheat oven to 375°F and grease mini muffin pan.
  2. Mix dry ingredients in a bowl. Combine milk, melted butter, eggs, and honey in another bowl.
  3. Stir wet into dry ingredients until just combined. Spoon batter into muffin cups.
  4. Bake 12–15 minutes until golden. Cool slightly.
  5. Drizzle with honey butter and garnish with parsley or chives. Serve warm.
