Ingredients
  

Salmon and Marinade
  • 1 lb salmon fillet cut into cubes
  • 2 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 2 cloves garlic minced
  • 1 tsp fresh ginger grated
  • 1 tbsp lime juice
  • salt and pepper to taste
Rice Bowl Toppings
  • 2 cups cooked jasmine rice
  • 1 avocado sliced
  • 1 cucumber diced
  • 1 tbsp sesame seeds
  • 2 tbsp cilantro chopped
  • 1 lime cut into wedges

Method
 

  1. Whisk soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger together.
  2. Marinate cubed salmon for 10–30 minutes.
  3. Cook salmon in a skillet until caramelized on all sides.
  4. Simmer leftover marinade until thickened and coat salmon.
  5. Assemble bowls with rice, salmon, avocado, cucumber, and toppings.
