Method
- Add 2 thyme sprigs to a pitcher and gently muddle to release aromas.
- Stir together lemon juice and honey in the pitcher until the honey fully dissolves.
- Fill two tall glasses with ice. Divide the honey–lemon mixture between glasses.
- Top each glass with chilled sparkling water and stir gently to combine without losing the fizz.
- Garnish with remaining thyme sprigs and lemon slices. Serve immediately.
Notes
Batch it: multiply ingredients and keep the honey–lemon base in the fridge for up to 2 days; add sparkling water just before serving. Variations: add a splash of ginger ale for spice or muddle a few berries for color.
