  • 3 bell peppers sliced

  • 3 tbsp honey
  • 2 tbsp lime juice fresh
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin

Method
 

  1. Preheat oven to 400°F (200°C).
  2. Mix marinade ingredients in a bowl.
  3. Coat chicken with marinade.
  4. Arrange vegetables on baking sheet.

  6. Bake for 20-25 minutes.
  7. Broil for 2-3 minutes if desired.
  8. Serve with tortillas and toppings.

Notes

Marinate longer for deeper flavor and serve with fresh lime juice.
