  • 2 large chicken breasts, sliced
  • 3 bell peppers, sliced mixed colors
  • 1 large red onion, sliced
  • 3 tbsp olive oil
  • 3 tbsp honey
  • 2 lime juice fresh
  • 3 cloves garlic, minced
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper optional
  • fresh cilantro for garnish
  • tortillas for serving

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Whisk olive oil, honey, lime juice, garlic, and spices in a bowl.
  3. Toss chicken with marinade until fully coated.
  4. Add peppers and onions and mix well.
  5. Spread mixture evenly on baking sheet.
  6. Bake for 20–25 minutes, stirring halfway through.
  7. Broil for 2–3 minutes for charred edges.
  8. Rest for 5 minutes, garnish, and serve warm.

Notes

For deeper flavor, marinate chicken for 30 minutes before baking.
