- Whisk honey, lime juice, lime zest, olive oil, and garlic to create marinade.
- Marinate chicken for 20–30 minutes.
- Cook chicken in skillet for 5–6 minutes per side until golden and cooked through.
- Mix cooked rice with avocado, lime juice, cilantro, olive oil, salt, and pepper.
- Slice cooked chicken into strips.
- Layer avocado rice and chicken in a round mold to form stacks.
- Remove mold carefully, garnish with avocado slices, cilantro, and lime.
