Ingredients
  

Honey Lime Chicken
  • 2 chicken breasts boneless skinless
  • 3 tbsp honey
  • 2 tbsp lime juice fresh
  • 1 tbsp lime zest
  • 2 tbsp olive oil
  • 2 cloves garlic minced
Avocado Rice
  • 2 cups cooked jasmine rice
  • 1 avocado mashed
  • 1 tbsp lime juice
  • 2 tbsp cilantro chopped

Equipment

  • Mixing bowls
  • Skillet or grill pan
  • Knife
  • Rice cooker or pot

Method
 

  1. Whisk honey, lime juice, lime zest, olive oil, and garlic to create marinade.
  2. Marinate chicken for 20–30 minutes.
  3. Cook chicken in skillet for 5–6 minutes per side until golden and cooked through.
  4. Mix cooked rice with avocado, lime juice, cilantro, olive oil, salt, and pepper.
  5. Slice cooked chicken into strips.
  6. Layer avocado rice and chicken in a round mold to form stacks.
  7. Remove mold carefully, garnish with avocado slices, cilantro, and lime.

Notes

For extra flavor add mango salsa or grilled corn.
