Ingredients
  

Roasted Carrots
  • 2 lb carrots peeled
  • 2 tbsp olive oil
  • 2 tbsp honey plus more for drizzling
  • 2 cloves garlic minced
  • 0.75 tsp salt
  • 0.5 tsp black pepper
Whipped Ricotta
  • 1.5 cups whole milk ricotta
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 0.5 tsp lemon zest

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss carrots with olive oil, honey, garlic, salt, pepper, and herbs.
  3. Roast for 25–30 minutes, flipping halfway, until caramelized and tender.
  4. Blend ricotta with olive oil, lemon juice, zest, and salt until smooth.
  5. Spread whipped ricotta on a platter and top with warm roasted carrots.

Notes

Serve warm for best texture and flavor.
