French Toast
  • 8 slices brioche bread thick cut
  • 4 eggs large
  • 1 cup whole milk
  • 0.25 cup heavy cream
  • 2 tbsp sugar
  • 1 tbsp honey
  • 1 tsp vanilla extract
  • 0.5 tsp cinnamon
  • 2 tbsp butter for cooking
Filling
  • 8 oz cream cheese softened
  • 0.25 cup honey
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Prepare the honey cream filling by mixing cream cheese, honey, powdered sugar, and vanilla until smooth.
  2. Cut pockets into brioche slices and fill with the cream mixture.
  3. Whisk eggs, milk, cream, sugar, honey, vanilla, and cinnamon to make custard.
  4. Dip stuffed bread into custard mixture briefly on each side.
  5. Cook in a buttered skillet over medium heat until golden brown on both sides.
  6. Serve warm with powdered sugar and extra honey.

Notes

Use slightly stale brioche for best texture and avoid over-soaking.
