Ingredients
  

Casserole
  • 1.5 lb fresh green beans trimmed
  • 3 tbsp unsalted butter
  • 1 tbsp olive oil
  • 12 oz mushrooms sliced
  • 2 shallots chopped
  • 2 cloves garlic minced
  • 3 tbsp all-purpose flour
  • 1.5 cups heavy cream
  • 0.5 cup whole milk
  • 1 cup Gruyère cheese grated
  • 0.5 cup Parmesan cheese grated
  • 1 cup crispy fried onions

Method
 

  1. Blanch green beans in salted boiling water until just tender; drain and cool.
  2. Sauté mushrooms in butter and olive oil until browned; add shallots and garlic.
  3. Stir in flour, then gradually add cream and milk, cooking until thickened.
  4. Add cheeses, seasoning, and thyme; stir until smooth.
  5. Fold in green beans and transfer to a baking dish.
  6. Top with crispy onions and bake at 375°F for 25–30 minutes.

Notes

Can be assembled a day ahead and baked before serving.
