Ingredients
  

Chicken Pasta
  • 2 chicken breasts sliced into cutlets
  • 12 oz pasta fettuccine or penne
  • 3 tbsp olive oil
  • 4 tbsp unsalted butter
  • 6 cloves garlic minced
  • 2 cups heavy cream
  • 1 cup parmesan cheese freshly grated
  • 1 cup chicken broth
  • 1 tbsp flour
  • 1 tsp Italian seasoning
  • 1 tsp paprika
  • 2 tbsp fresh parsley chopped

Equipment

  • Large skillet
  • Large pot
  • Cutting board
  • Whisk

Method
 

  1. Cook pasta until al dente, reserve pasta water, then drain.
  2. Season chicken with paprika, Italian seasoning, salt, and pepper.
  3. Sear chicken in olive oil until golden and fully cooked.
  4. Melt butter and sauté garlic in skillet.
  5. Whisk in flour, then slowly add broth and cream.
  6. Stir in parmesan until smooth.
  7. Return chicken and pasta to skillet.
  8. Garnish and serve hot.

Notes

Use freshly grated parmesan and reserve pasta water for best sauce texture.
