Instant Pot Corned Beef and Cabbage

Ingredients
  

Main
  • 3-4 lb corned beef brisket with spice packet
  • 1 large yellow onion quartered
  • 4 cloves garlic smashed
  • 4 cups beef broth
  • 1-2 cups water as needed
  • 1 tbsp apple cider vinegar
  • 1 tsp black peppercorns optional
  • 1 bay leaf
Vegetables
  • 1 head green cabbage cut into wedges
  • 4 large carrots cut into chunks
  • 1.5 lb baby potatoes halved if large
  • 2 tbsp butter optional
  • 1 tbsp fresh parsley for garnish

Equipment

  • Instant Pot or electric pressure cooker
  • Cutting board
  • Sharp knife
  • Tongs
  • Measuring cups

Method
 

  1. Rinse corned beef brisket and pat dry.
  2. Add onion, garlic, bay leaf, peppercorns, vinegar, and broth to Instant Pot.
  3. Place brisket on top and sprinkle spice packet over it.
  4. Seal and cook on HIGH pressure for 90 minutes with natural release for 15–20 minutes.
  5. Remove brisket, cover, and let rest before slicing.
  6. Add potatoes and carrots; cook on HIGH pressure for 5 minutes with quick release.
  7. Add cabbage and cook for 2–3 minutes, then quick release.
  8. Slice beef against the grain and serve with vegetables and broth.

Notes

Layer vegetables after cooking beef to avoid overcooking. Always slice brisket against the grain for tenderness.
