Ingredients
  

Cookie Batter
  • 1 cup steel-cut oats
  • 3 cups water or water/milk mix
  • 1 pinch salt
  • 1-2 tsp cinnamon optional
  • 1 tsp vanilla extract optional
Filling
  • Honey, maple syrup, berries, nuts for serving

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Add steel-cut oats and liquid to the Instant Pot.
  2. Add salt and cinnamon and stir lightly.
  3. Secure lid and set valve to Sealing.
  4. Cook on High Pressure for 4 minutes.
  5. Allow natural pressure release for 10–12 minutes.
  6. Stir well to thicken the oats.
  7. Add vanilla and sweetener if desired.
  8. Serve with berries, nuts, or other toppings.

Notes

Use milk for creamier oats; store leftovers for up to 5 days.
