- Preheat oven to 375°F (190°C). Arrange mini shells on a baking sheet.
- In a skillet, cook ground beef and onion until browned. Drain excess fat.
- Add garlic powder, ranch seasoning, salt, and pepper. Stir in bacon.
- Combine with cheeses and optional mayo or sour cream in a bowl.
- Fill each shell with mixture and top with extra cheese.
- Bake for 10–12 minutes until golden and bubbly.
- Garnish with green onions or parsley. Serve warm with dipping sauces.
Notes
To make ahead, prepare the filling a day early and bake before serving. Freezes well for up to 1 month.
