Ingredients
  

Cake
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 cup Irish whiskey
  • 1 cup buttermilk
  • 1 cup mixed dried fruits raisins, currants, chopped dates
  • 0.5 cup chopped nuts walnuts, pecans, or almonds
Whiskey Glaze
  • 0.5 cup Irish whiskey
  • 0.5 cup granulated sugar
  • 2 tbsp unsalted butter

Method
 

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
  2. Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. Cream butter and sugar until light and fluffy. Beat in eggs one at a time.
  4. Alternately mix dry ingredients and buttermilk into butter mixture, then stir in Irish whiskey.
  5. Fold in dried fruits and nuts. Pour batter into prepared pan.
  6. Bake 50–60 minutes until toothpick comes out clean. Cool 10–15 minutes.
  7. Prepare glaze: heat whiskey, sugar, and butter in a small saucepan until sugar dissolves.
  8. Poke cake with skewer and pour glaze over warm cake. Cool completely before serving.

Notes

Soak dried fruits in whiskey for extra moistness if desired.
