Method
- Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan.
- Whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Cream butter and sugar until light and fluffy. Beat in eggs one at a time.
- Alternately mix dry ingredients and buttermilk into butter mixture, then stir in Irish whiskey.
- Fold in dried fruits and nuts. Pour batter into prepared pan.
- Bake 50–60 minutes until toothpick comes out clean. Cool 10–15 minutes.
- Prepare glaze: heat whiskey, sugar, and butter in a small saucepan until sugar dissolves.
- Poke cake with skewer and pour glaze over warm cake. Cool completely before serving.
Notes
Soak dried fruits in whiskey for extra moistness if desired.
