- Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
- Mash bananas in a large bowl until mostly smooth.
- Whisk in eggs, honey, melted butter, and vanilla until combined.
- Stir in oats, cinnamon, baking powder, baking soda, and salt.
- Spread mixture evenly into prepared pan.
- Bake for 25–30 minutes until set and lightly golden.
- Cool completely before slicing into bars.
Notes
Use very ripe bananas for maximum sweetness and flavor.
