Ingredients
  

Bar Batter
  • 3 ripe bananas mashed
  • 2 cups rolled oats
  • 2 eggs large
  • 0.33 cup honey or maple syrup
  • 0.25 cup unsalted butter melted
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. Mash bananas in a large bowl until mostly smooth.
  3. Whisk in eggs, honey, melted butter, and vanilla until combined.
  4. Stir in oats, cinnamon, baking powder, baking soda, and salt.
  5. Spread mixture evenly into prepared pan.
  6. Bake for 25–30 minutes until set and lightly golden.
  7. Cool completely before slicing into bars.

Notes

Use very ripe bananas for maximum sweetness and flavor.
