Cheesecake Filling
  • 8 oz cream cheese softened
  • 3 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries diced
French Toast
  • 8 slices brioche bread thick-cut
  • 4 eggs large
  • 1 cup whole milk
  • 1 tbsp granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 2 tbsp unsalted butter
Toppings
  • maple syrup for serving
  • powdered sugar for garnish
  • fresh strawberries for garnish

Method
 

  1. In a medium bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in diced strawberries.
  2. In a shallow bowl, whisk together eggs, milk, sugar, vanilla extract, and cinnamon.
  3. Spread cheesecake filling onto 4 slices of brioche bread and top with remaining slices to create sandwiches.
  4. Dip each sandwich into the custard mixture, coating both sides evenly.
  5. Heat butter in a large skillet over medium heat.
  6. Cook stuffed French toast for 3–4 minutes per side until golden brown and heated through.
  7. Transfer to plates and top with maple syrup, powdered sugar, and fresh strawberries.
  8. Serve warm and enjoy immediately.

Notes

Use thick brioche bread for the best texture and avoid over-soaking the bread in custard.
