- In a medium bowl, beat softened cream cheese, powdered sugar, and vanilla extract until smooth. Fold in diced strawberries.
- In a shallow bowl, whisk together eggs, milk, sugar, vanilla extract, and cinnamon.
- Spread cheesecake filling onto 4 slices of brioche bread and top with remaining slices to create sandwiches.
- Dip each sandwich into the custard mixture, coating both sides evenly.
- Heat butter in a large skillet over medium heat.
- Cook stuffed French toast for 3–4 minutes per side until golden brown and heated through.
- Transfer to plates and top with maple syrup, powdered sugar, and fresh strawberries.
- Serve warm and enjoy immediately.
Notes
Use thick brioche bread for the best texture and avoid over-soaking the bread in custard.
