- Whisk eggs, milk, and butter. Add flour, salt, and pepper. Fold in corn, cheese, and green onions.
- Heat oil in a skillet over medium heat.
- Spoon 2–3 tbsp batter per fritter, flatten slightly. Fry 2–3 minutes per side until golden and crispy.
- Drain on paper towels and serve with preferred dipping sauce.
Notes
Batter can be prepared in advance. Store leftovers in an airtight container in fridge and reheat in a skillet for crispiness.
