Ingredients
  

Fritter Base
  • 2 cups corn kernels fresh, canned, or frozen
  • 1 cup shredded cheddar cheese
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1/4 cup milk
  • 2 tbsp melted butter
  • 1/4 cup chopped green onions
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • as needed oil for frying

Method
 

  1. Whisk eggs, milk, and butter. Add flour, salt, and pepper. Fold in corn, cheese, and green onions.
  2. Heat oil in a skillet over medium heat.
  3. Spoon 2–3 tbsp batter per fritter, flatten slightly. Fry 2–3 minutes per side until golden and crispy.
  4. Drain on paper towels and serve with preferred dipping sauce.

Notes

Batter can be prepared in advance. Store leftovers in an airtight container in fridge and reheat in a skillet for crispiness.
