Ingredients
  

  • 12 oz bow tie pasta
  • 1.5 cups cherry tomatoes halved
  • 1 cup mozzarella pearls
  • 0.75 cup black olives sliced
  • 1 cup cucumber diced
  • 0.25 cup red onion thinly sliced
  • 0.25 cup fresh basil torn
  • 0.33 cup olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Cook bow tie pasta in salted boiling water until al dente. Drain and cool.
  2. Place cooled pasta in a large bowl and add vegetables, olives, mozzarella, and basil.
  3. Whisk olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  4. Pour dressing over pasta salad and toss gently.
  5. Refrigerate at least 30 minutes before serving.

Notes

Add grilled chicken or salami for a heartier version.
