Ingredients
  

Lemon Spread
  • 4 lemons zested and juiced
  • 1 cup granulated sugar
  • 4 eggs large
  • 0.5 cup unsalted butter cut into cubes
  • 1 tsp vanilla extract optional
  • 1 pinch salt

  • Double boiler or heatproof bowl
  • Whisk
  • Fine-mesh sieve

Method
 

  1. Whisk together eggs, sugar, lemon juice, and zest in a heatproof bowl.
  2. Place over simmering water and cook gently, stirring constantly.
  3. Add butter cubes gradually, stirring until thick and glossy.
  4. Strain mixture through a fine sieve for smooth texture.
  5. Stir in vanilla and salt, cool slightly, then transfer to jars.
  6. Refrigerate for up to 2 weeks.

Notes

For a richer flavor, add a splash of limoncello or use Meyer lemons.
