Ingredients
  

Main Dish
  • 1 tbsp olive oil
  • 1 lb Italian sausage casings removed
  • 1 small yellow onion diced
  • 1 red bell pepper diced
  • 1 green bell pepper diced
  • 3 cloves garlic minced
  • 1 cup long-grain white rice uncooked
  • 14.5 oz diced tomatoes with juices
  • 2 cups chicken broth
  • 1 tsp Italian seasoning
  • 0.5 tsp smoked paprika
  • 0.5 cup parmesan cheese grated, optional
  • 2 tbsp fresh parsley chopped

  • Wooden spoon

Method
 

  1. Heat olive oil in a large skillet over medium heat.
  2. Brown Italian sausage, breaking apart, until fully cooked.
  3. Add onion and bell peppers; sauté until softened. Stir in garlic.
  4. Add uncooked rice and toast lightly for 1–2 minutes.
  5. Pour in diced tomatoes and chicken broth. Add seasonings and stir.
  6. Bring to boil, reduce heat, cover and simmer 18–20 minutes.
  7. Let rest 5 minutes, fluff with fork, stir in parmesan if desired.
  8. Garnish with parsley and serve warm.

Notes

Use turkey sausage for a lighter option. Adjust spice level as desired.
