Method
- Heat olive oil in a large skillet over medium heat.
- Brown Italian sausage, breaking apart, until fully cooked.
- Add onion and bell peppers; sauté until softened. Stir in garlic.
- Add uncooked rice and toast lightly for 1–2 minutes.
- Pour in diced tomatoes and chicken broth. Add seasonings and stir.
- Bring to boil, reduce heat, cover and simmer 18–20 minutes.
- Let rest 5 minutes, fluff with fork, stir in parmesan if desired.
- Garnish with parsley and serve warm.
Notes
Use turkey sausage for a lighter option. Adjust spice level as desired.
