  • 1 lb Italian sausage mild or hot
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 carrots diced
  • 2 celery ribs diced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 0.5 tsp crushed red pepper flakes optional
  • 4 cups chicken broth
  • 14.5 oz diced tomatoes canned
  • 30 oz white beans drained and rinsed
  • 2 cups spinach fresh
  • 1 bay leaf
  • 1 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Brown sausage in a pot, breaking it into pieces, then remove and set aside.
  2. Cook onion, carrots, and celery until softened.
  3. Add garlic, oregano, basil, and red pepper flakes.
  4. Return sausage to the pot along with broth, tomatoes, beans, and bay leaf.
  5. Simmer for 20–25 minutes.
  6. Stir in spinach until wilted and season to taste.

Notes

Add a Parmesan rind while simmering for extra flavor.
