Method
- Brown sausage in a pot, breaking it into pieces, then remove and set aside.
- Cook onion, carrots, and celery until softened.
- Add garlic, oregano, basil, and red pepper flakes.
- Return sausage to the pot along with broth, tomatoes, beans, and bay leaf.
- Simmer for 20–25 minutes.
- Stir in spinach until wilted and season to taste.
Notes
Add a Parmesan rind while simmering for extra flavor.
