Ingredients
  

Pasta
  • 12 oz pasta
Sauce
  • 3 zucchinis sliced
  • 3 tbsp olive oil
  • 3 garlic cloves minced
  • 1 onion chopped
  • 0.5 cup parmesan cheese grated
  • 1 cup fresh basil
  • 0.25 cup fresh parsley
  • 1 tbsp lemon juice
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp red pepper flakes optional
  • 0.5 cup pasta water reserved

Equipment

  • Large pot
  • Skillet
  • Blender or food processor
  • Colander

Method
 

  1. Cook pasta in salted boiling water until al dente. Reserve pasta water and drain.
  2. Heat olive oil in a skillet and sauté onion until soft. Add garlic and cook briefly.
  3. Add zucchini and cook until tender and slightly golden.
  4. Blend zucchini mixture with herbs, lemon juice, and seasoning until smooth.
  5. Return sauce to skillet and add pasta, tossing with reserved water as needed.
  6. Stir in parmesan cheese until melted and creamy.
  7. Serve hot with extra herbs and parmesan on top.

Notes

Use fresh herbs for best flavor and adjust consistency with pasta water.
