Ingredients
  

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • orange food coloring as needed
  • black royal icing for Jack-o'-Lantern faces

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream butter and sugar together in a mixing bowl until light and fluffy.
  3. Beat in egg and vanilla extract until well combined.
  4. Gradually mix in flour, baking powder, and salt to form a dough.
  5. Add orange food coloring and knead until the dough is evenly tinted.
  6. Roll dough to 1/4-inch thickness and cut out pumpkin shapes using the cookie cutter.
  7. Place cookies on prepared baking sheet and bake for 8–10 minutes or until edges are lightly golden.
  8. Cool completely before piping Jack-o'-Lantern faces with black royal icing. 🎃
