Dip Ingredients
  • 2 cups corn kernels fresh, frozen, or canned
  • 2-3 jalapeños seeded and diced
  • 8 oz cream cheese softened
  • 1 cup sour cream
  • 1.5 cups shredded cheddar cheese
  • 2 cloves garlic minced
  • 3 green onions sliced
  • 0.25 cup cilantro optional, chopped
  • 0.5 tsp paprika
  • 0.25 tsp cumin
  • salt and pepper to taste

Method
 

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. In a bowl, mix softened cream cheese and sour cream until smooth.
  3. Stir in cheddar cheese, garlic, green onions, cilantro, paprika, cumin, salt, and pepper.
  4. Fold in corn and diced jalapeños until evenly mixed.
  5. Spread mixture into baking dish.
  6. Bake 20–25 minutes until hot and bubbling.
  7. Garnish with jalapeños or cilantro and serve warm.

Notes

For extra spice, leave some jalapeño seeds in or add cayenne pepper.
