- Prepare the slaw by combining cabbage, carrots, cilantro, lime juice, and mayonnaise. Season and chill.
- Whisk together all ingredients for the curry-lime sauce and set aside.
- Mix ground turkey with jalapeño, garlic, cilantro, breadcrumbs, mayo, curry powder, cumin, salt, and lime juice. Form into 4 patties.
- Cook patties in skillet with olive oil, 4–5 minutes per side, until internal temperature reaches 165°F (74°C).
- Toast buns and spread curry-lime sauce on each side.
- Assemble burgers with patty, cheese, slaw, and cilantro. Serve hot.
Notes
Add more curry or jalapeño for extra heat. Great with sweet potato fries.
