Jalapeño Popper Grilled Cheese

Ingredients
  

Sandwich
  • 4 slices bread sourdough or white
  • 2 tbsp butter softened
  • 2 jalapeños seeded and diced
  • 3 oz cream cheese softened
  • 0.5 cup sharp cheddar cheese shredded
  • 0.5 cup mozzarella cheese shredded
  • 3 slices bacon cooked and chopped (optional)

Equipment

  • Skillet or griddle
  • Spatula
  • Mixing bowl
  • Butter knife

Method
 

  1. Sauté jalapeños for 1–2 minutes or leave raw for extra heat.
  2. Mix cream cheese, cheddar, mozzarella, bacon, and jalapeños in a bowl.
  3. Butter one side of each bread slice. Place two slices butter-side down on a skillet.
  4. Spread filling evenly, top with remaining slices butter-side up.
  5. Grill 3–4 minutes per side over medium-low heat until golden and melted.
  6. Slice and serve hot.

Notes

Add crushed tortilla chips for crunch or use pickled jalapeños for tang.
