Ingredients
  

Fajitas
  • 1.5 lbs flank or skirt steak thinly sliced after cooking
  • 2 tbsp olive oil
  • 1 lime juiced
  • 3 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 3 bell peppers sliced
  • 1 large onion sliced
  • 8 small tortillas flour or corn
  • 2 tbsp fresh cilantro chopped

Equipment

  • Large skillet or cast iron pan
  • Mixing bowls
  • Cutting board
  • Sharp knife

Method
 

  1. Mix olive oil, lime juice, garlic, chili powder, paprika, cumin, salt, and pepper in a bowl.
  2. Marinate steak for at least 30 minutes.
  3. Heat a large skillet over high heat.
  4. Cook steak 3–4 minutes per side until seared.
  5. Let steak rest 5 minutes, then slice thinly against the grain.
  6. Cook peppers and onions in the same skillet until tender.
  7. Return sliced steak to skillet and toss with vegetables.
  8. Serve in warm tortillas with cilantro and lime wedges.

Notes

For extra flavor, marinate the steak overnight and cook in a hot cast iron skillet.
