Ingredients
  

  • 1 cup natural peanut butter unsweetened
  • 1/2 cup powdered erythritol or preferred keto-friendly sweetener
  • 2 tbsp coconut flour
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup sugar-free chocolate chips
  • 1 tsp coconut oil for melting chocolate
  • optional toppings chopped nuts or unsweetened shredded coconut

Method
 

  1. Mix peanut butter, powdered sweetener, coconut flour, vanilla, and salt until smooth.
  2. Roll mixture into 1-inch balls and place on a parchment-lined tray.
  3. Refrigerate balls for 15–20 minutes to firm up.
  4. Melt chocolate chips with coconut oil in microwave-safe bowl, stirring until smooth.
  5. Dip chilled balls into melted chocolate, coating evenly. Allow excess chocolate to drip.
  6. Optional: Sprinkle chopped nuts or shredded coconut on top.
  7. Refrigerate for 30 minutes or until chocolate sets. Serve chilled or at room temperature.
