Method
- Heat olive oil in a large skillet or Dutch oven over medium heat. Brown sliced kielbasa, then set aside.
- Cook bacon until crisp if using, then remove and crumble, leaving a small amount of fat in the pot.
- Sauté onion and bell pepper until soft and slightly caramelized.
- Add garlic and cook for 30–60 seconds until fragrant.
- Stir in BBQ sauce, brown sugar, mustard, Worcestershire sauce, smoked paprika, and chili powder.
- Add baked beans and kidney beans, stirring to combine evenly.
- Return kielbasa and bacon to the pot and mix gently.
- Simmer on low for 20–30 minutes, stirring occasionally.
- Optional: transfer to baking dish and bake at 350°F for 25–30 minutes until thick and bubbly.
- Taste, adjust seasoning, and serve warm.
Notes
Best served after resting 10 minutes. Flavors deepen overnight.
