- Heat oil in a wide skillet over medium heat and lightly pan-fry potatoes until golden.
- Add minced garlic and sauté briefly until fragrant.
- Pour in soy sauce, sugar, and water. Stir gently to combine.
- Bring to a boil, then reduce to a simmer and cook 15–20 minutes until potatoes are tender.
- Uncover and cook a few more minutes until sauce thickens and coats potatoes.
- Finish with sesame oil, sesame seeds, and green onions before serving.
