Ingredients
  

Salmon & Vegetables
  • 4 salmon fillets
  • 1.5 lb baby potatoes halved
  • 3 cups broccoli florets
  • 3 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
Lemon Butter Sauce
  • 4 tbsp unsalted butter
  • 2 cloves garlic minced
  • 2 tbsp fresh lemon juice

Equipment

Method
 

  1. Preheat oven to 425°F (220°C) and prepare a baking sheet.
  2. Toss potatoes with olive oil, salt, and pepper. Roast 20 minutes.
  3. Add broccoli to the pan and roast another 10–15 minutes until tender.
  4. Season salmon with salt and pepper.
  5. Sear salmon in a skillet until cooked through, then remove.
  6. Melt butter in skillet, add garlic and lemon juice.
  7. Return salmon to pan and spoon sauce over top.
  8. Serve salmon with crispy potatoes and broccoli.

Notes

For best results, use fresh salmon and real lemon juice.
