Ingredients
  

Dressing Base
  • 0.25 cup fresh lemon juice
  • 1 tbsp lemon zest optional
  • 3 tbsp Dijon mustard
  • 0.33 cup olive oil extra virgin
  • 1 tbsp honey or maple syrup
  • 1 garlic clove minced
  • 1 tbsp apple cider vinegar
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. In a bowl, whisk together lemon juice, Dijon mustard, honey, garlic, and apple cider vinegar.
  2. Slowly drizzle in olive oil while whisking continuously until emulsified and smooth.
  3. Season with salt and black pepper, adjusting to taste.
  4. Add a small amount of water if needed to thin consistency.
  5. Transfer to a jar, refrigerate, and shake before serving.

Notes

Shake well before each use as natural separation may occur. Best used within 5–7 days.
