Method
- Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- Mix oats, flour, sugars, baking powder, and salt in a bowl.
- Add melted butter and vanilla; mix until crumbly.
- Press two-thirds of mixture into pan to form crust.
- Bake crust 12–15 minutes until lightly golden.
- Whisk condensed milk, lemon juice, zest, egg yolks, and vanilla.
- Pour filling over crust and sprinkle remaining crumble on top.
- Bake 20–25 minutes until set and golden.
- Cool completely, chill 2 hours, slice and serve.
Notes
For cleaner slices, chill thoroughly before cutting. Fresh lemon juice is highly recommended.
