Ingredients
  

Crust and Crumble
  • 2 cups rolled oats
  • 1.5 cups all-purpose flour
  • 0.75 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup unsalted butter melted
  • 1 tsp vanilla extract
Lemon Filling
  • 14 oz sweetened condensed milk
  • 0.5 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 2 egg yolks
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
  2. Mix oats, flour, sugars, baking powder, and salt in a bowl.
  3. Add melted butter and vanilla; mix until crumbly.
  4. Press two-thirds of mixture into pan to form crust.
  5. Bake crust 12–15 minutes until lightly golden.
  6. Whisk condensed milk, lemon juice, zest, egg yolks, and vanilla.
  7. Pour filling over crust and sprinkle remaining crumble on top.
  8. Bake 20–25 minutes until set and golden.
  9. Cool completely, chill 2 hours, slice and serve.

Notes

For cleaner slices, chill thoroughly before cutting. Fresh lemon juice is highly recommended.
